    Maize should be the dried mature grain of Zea mays L., free from added coloring matter, molds, weevils, and other impurities. It should also be uniform in size, shape, and color, and free from rodent hair and excreta.  

  • Composition

    Raw, yellow, sweet maize kernels are made up of 76% water, 19% carbohydrates, 3% protein, and 1% fat.  

  • Dimensions

    The length of a maize kernel is 13.26–14.47 mm, the breadth is 8.69–9.97 mm, and the thickness is 5.36–6.50 mm.  

  • Nutritional value

    Maize kernels are a good source of B vitamins, including thiamin, niacin, pantothenic acid (B5), and folate.  

  • Quality standards

    For example, yellow corn for human consumption may have a maximum moisture content of 14.5%, a maximum foreign matter content of 1.5%, and a maximum broken kernel content of 3%.
